Located in the heart of Castroville, Texas, our bakery brings together refined technique, thoughtful creativity, and the kind of hospitality that makes even a simple morning pastry feel special. THE CHEF BEHIND BAKED & 2M SMOKEHOUSE
Chef Grecia Ramos did not grow up knowing that she would one day own a bakery. She discovered her love for baking in her twenties, when the precision, patience, and creative freedom of the craft began to feel like more than an interest. It became a calling.
Known online as @lareinadepostres, or “the queen of desserts,” Chef Grecia has built her culinary identity around the pastries, breads, and desserts that continue to challenge and inspire her. Her work reflects a deep appreciation for detail, from the texture of a laminated dough to the final presentation of a celebratory cake.
What began as a developing passion gradually became a profession, and eventually, a bakery of her own.
A PASSION BECOMES A PROFESSION
FROM THE 2M KITCHEN TO CULINARY SCHOOL
Chef Grecia’s professional journey began to take shape through 2M Smokehouse, the acclaimed San Antonio barbecue restaurant founded by her husband, Pitmaster Esaul Ramos.
Encouraged to share her baking skills through the restaurant, she began creating desserts for 2M Smokehouse. The response helped confirm that baking could become more than a personal pursuit. It could become the foundation of a meaningful culinary career.
Determined to strengthen her technique and deepen her knowledge, Chef Grecia pursued formal training at the Culinary Institute of America. That education gave her the technical foundation to approach baking and pastry with greater confidence, discipline, and purpose.
The experience also helped shape the kind of chef she wanted to become: one who respects tradition, continues to learn, and is never afraid to make something distinctly her own.

Baked opened in Castroville in 2023, giving Chef Grecia a dedicated space to explore the full range of her craft. The bakery was designed to support the detailed work behind professional pastry, bread, chocolate, cake decorating, and laminated doughs, while creating a welcoming experience for every guest who walks through the door.
For Chef Grecia, opening Baked was about more than launching another concept. It was an opportunity to build something that felt entirely personal.
Here, she could bring together formal training, professional experience, cultural influence, and creative instinct under one roof. The result is a chef-led bakery with a character all its own, rooted in Castroville and created for anyone who appreciates food made with care.
